Vegan Oil-Free Nachos

This recipe is guaranteed to change your healthy vegan nacho game forever. This recipe is free of oil, gluten, dairy, refined ingredients, and is low in sodium! Not only is this recipe free of all the bad stuff, but it is also loaded with vegetables. Perfect for making for parties, or can be made single serve!

Happy Wednesday everyone! How are you doing? I hope you are doing well, because can't relate lol. I got Covid this past weekend so I'll be quarantined for awhile, luckily I have some recipes prepped and photographed already so I will still be able to put out content, but it might be a little less frequently. I honestly don't feel too bad, my headache is horrible, and I feel fatigued, but besides that no complaints. I think the hardest part will be the isolation, because it will just be me all alone. It is what it is though, and I am happy I have these delicious nachos to enjoy!

I have actually experimented with a couple different nacho cheese recipes in the past, and never quite got that perfect gooey texture, until now. If you have been following me for awhile, you know that I like to make my recipes on the "extreme" healthy side, so creating a cheese that didn't have coconut oil, or processed ingredients in it was super important to me. This recipe is made purely from plant based ingredients, so not only is it delicious, but it is health promoting!

That gets me into another topic I want to discuss briefly, and that is incorporating more healthy foods is so key to overall health. Diet culture has twisted the way we view food as a bad thing, and constantly telling us to cut out stuff, which I agree with for the most part, (except carbs, give me all the bread) but while we cut out these harmful ingredients, we need to replace them with healthy foods to properly nourish our bodies. It is so important that you are actually eating enough food, and enough variety of foods in order to meet your health goals. That's why I focus on adding a wide variety of vegetables and ingredients into all of my recipes. I know it may seem overwhelming sometimes when you look at the ingredient list, but I promise it'll be worth it. I also like creating recipes where you can easily play around with the vegetables, so if you can't find a certain one, or if you have leftover vegetables from another recipes feel free to use them.

Total Time: 25 Minutes


For the Cheese:

- 1 Head of cauliflower

- 1/4 Cup nutritional yeast

- 2 Teaspoons psyllium husk

- 1 Teaspoon miso paste

- 1/2 Teaspoon chili powder

- 1 Teaspoon garlic powder

- 1/4 Teaspoon turmeric

- splash of plant milk

For the Nachos:

- 1 Can black beans

- 1 Bell Pepper

- 1 Onion

- 1 Teaspoon chili powder

- 1 Teaspoon cumin

- 1 Teaspoon garlic powder

- 1 Tomato

- 1 Avocado

- Cilantro

- Juice of 1 lime

- 1 Bag chips of choice


  1. Begin by breaking up your cauliflower and steaming. While the cauliflower is steaming chop up your bell pepper into strips, and half the onion into half moons. Add to a pan and saute with seasonings.

  2. Dice the other half of the onion, the tomato, and the avocado and add to a bowl with the lime juice and cilantro.

  3. Once cauliflower is done add to a high speed blender with remaining cheese ingredients and blend. Pour the cheese over the chips, and add sauteed peppers and black beans. Crisp up with torch, or broil in oven. Remove from heat, and add the tomato mixture and enjoy!
