Happy Monday friends! How is September almost over? I honestly can't believe how fast this year is going by, I feel like I just graduated college yesterday, and that was about 5 months ago! Anyways, I have a ton of fun stuff planned for the rest of this year, and my one year anniversary of Theallnaturalvegan.com . This blog has completely changed my life for the better, and the future of it excites me so much! I am thinking of planning a big giveaway for my one year anniversary, what do you guys think? To kick off all the exciting stuff coming this fall/winter(recipe wise, that's the only exciting thing about fall/winter lol), I am bringing you one of my healthy stable recipes!

Everyone needs a good frosting recipe. When I was younger, and before I was vegan, I used to love baking cakes, and I was pretty good if I do say so myself. I was really into decorating with fondant and such, but also loved creating delicious cakes, I still have people rave about my old cakes, so you could say I have a little bit of credibility when it comes to cakes and frosting.

Now, it's very simple in my opinion to make a vegan frosting recipe that is delicious, it's simple, powdered sugar, vegan butter, vegetable shortening, vanilla and a little plant based milk, that's it. However, the challenge arises when making a healthy all natural vegan certified (LOL) vegan frosting. I have searched up and down the internet searching for a recipe that I felt was: 1. delicious, 2. whole foods plant based, 3. Did not contain coconut sugar/maple syrup, because in my opinion these are refined sugars, yes still a better option than refined white sugar, but not whole foods plant based. However, the search it over, I bring you the most delicious whole foods plant based vegan cream cheese frosting ever!

The best p0art about this recipe, aside from the fact that it's so healthy and delicious, is that it is super easy, all you need is a blender! It only takes a couple ingredients that you can find at any local grocery store! I am completely obsessed with making this, and love topping all my desserts and even my pumpkin pie smoothie bowl! It keeps in the fridge for about two weeks, but I can assure you it will be gone by then, because it is so delicious! Alright, I think it's time I share the recipe to this super creamy vegan cream cheese frosting!

Recipe

Serves: Makes 1 1/2 Cups frosting

Total time: 5 Minutes - Plus soaking time

Ingredients:

- 1 Cup raw cashews

- 5 Medjool dates

- 6 Tablespoons plant based yogurt, Kite Hill is my favorite!

- Juice from 1/2 a lemon

- 1 Teaspoon vanilla bean - "VEGAN10" saves you $10 at checkout!

- 1 Tablespoon coconut butter - this helps firm up the frosting without using oil!

Directions:

  1. Soak the cashews and dates together for a couple hours, or overnight.

  2. Once soaked strain and save the water. Add to a high speed blender with remaining ingredients. If you are struggling to get it to mix, add a little bit of the water (it's super sweet!) slowly until it blends evenly.

  3. Allow to chill in the fridge before using, enjoy!
