Red Velvet Baked Oats

Happy Monday friends! October calls for more baked oat recipes! If you've been around for awhile, then you know baked oats are my ISH! Unfortunately I don't make them as I would like, because I get extremely hungry in the mornings no matter what I eat the day before, so if breakfast takes longer than 2 minutes to make I can't do it. However, some days when I need a treat I make baked oats as a snack, or a dessert!
I make my baked oats a little differently than some other people I have seen. I like the consistency of my baked oats to be more like cake, rather than mushy oats. This is a personal preference, but I think it's nice because it's like cake for breakfast. It also works out too, because you can simply adjust the liquid to make it how you like, while still keeping the delicious flavor!
That is one of the things I love most about baked oats; they are so customizable! If you want to bump up the protein, simply add two scoops instead of 1, not sweet enough? Add a date, apple sauce, or banana! Want to boost the fiber? Add chia seeds, flax seeds, or use the Plant Fusion Protein + Fiber blend! Alright, I think it's time for the recipe!
Total time: 25 minutes
1/2 Cup Oat flour
1/2 Teaspoon vanilla
(Optional) Natural red food coloring: beetroot powder works*
plant based milk to desired consistency
* the protein powder alone will not dye the oats red
If you do not have oat flour pre made, go ahead and place your oats in the blender and blend until you achieve a fine flour.
Preheat the oven to 350, you can also use an air fryer. In an oven safe bowl add ingredients together and mix thoroughly.
Place in the oven and bake for 20 minutes.
Once done, allow to cool slightly, and top with my Simple vegan cream cheese
