This vegan recipe brings together the amazing flavors of a raspberry dessert, all with the connivence of a pizza. This recipe also sneaks in some extra vegetables with the plant based pre-made pizza crust! This vegan dessert recipe is: vegan, dairy-free, gluten-free, refined sugar-free, and oil-free!
Happy Sunday friends! Today's recipe is long overdue. I initially planned to share this recipe in September, but my Instagram account got restricted (which is still a mystery as to why). When my account was finally restored, I did not have room in my schedule to share it, so here we are today with this delicious recipe!
I created this recipe as part of a collaboration with Wholly Veggie. If you have never heard of Wholly Veggie before, let me introduce you to a game changing brand in the plant based food game. Wholly Veggie has found a way to create all the classic flavors we love (think pizzas, wings, patties, etc.) without any animal products; can you say GOALS! I love all their products, especially their cauliflower wings. I created a Buffalo Cauliflower Salad using the cauliflower wings, and it is one of my favorite salad recipes I have ever created.
For this dessert pizza recipe I used their Naked Cauliflower Crust, which is one of my favorite gluten-free crusts. This crust has the perfect texture; a little crispy on the bottom, and moist on the inside. I love using this crust for savory pizza as well, but when I got the idea for this recipe, I couldn't shake it!
I also love this recipe, because it's such a quick and easy dessert recipe. I have such a sweet tooth, and love desserts, but sometimes I just don't feel like making them if they take a long time, or are labor intensive. This recipe is the perfect solution!
Raspberry Crumble Dessert Pizza:
Total Time: 30 Minutes
Serves: 2 Pizza
For The Sauce:
2 Cups frozen raspberries
⅓ Cup applesauce
1 Teaspoon vanilla
1 Tablespoon chia seeds
For the Crumble:
1 Cup gluten free oat flour
¾ Cup unsweetened applesauce
1 Teaspoon cinnamon
1 Teaspoon vanilla
½ Cup almond milk
1 Teaspoon baking powder
½ Cup coconut flour
2 Wholly Veggie cauliflower pizza crusts
Chopper Almonds to top
In a saucepan combine the frozen raspberries, applesauce, vanilla and chia seeds. Cook slowly over medium heat until it resembles a jam. Once a jam consistency is reached, remove from heat and set aside.
In a separate bowl assemble the crumble by adding the oat flour, applesauce, cinnamon, vanilla, almond milk, baking powder, and coconut flour together, stirring slowly. Once you get a crumbly texture set aside.
Remove the frozen pizza crust from the package and top with the raspberry sauce as you would a normal pizza. Next, layer the crumble over the top of the raspberry sauce and top with sliced almonds.
Place the pizza in the preheated oven for 15-17 minutes. Once the edges are golden brown, remove from heat. Serve and enjoy!
