Pistachio Avocado Mousse

This vibrant green mousse is the perfect simple plant based dessert recipe! This vegan mousse is made using only 4 ingredients, and only takes 5 minutes to make! This recipe is vegan, gluten-free, refined sugar-free, dairy-free, paleo, keto, high fiber, and whole foods plant based!

Happy Friday friends! This week has honestly felt so long, and I am so happy Friday is finally here. I have been super busy with work, and creating recipes, while also taking on new projects, which is all very exciting, and I love it all, but I have unfortunately become a little unorganized during this time. Therefore this weekend I am super excited, because I am going to get everything reorganized, and structured again, I am so excited(ew, is this adulting haha). A couple posts back I shared that I am all about simple recipes recently, so today I bring you the ultimate simple recipe: Pistachio Avocado Mousse!

I am honestly so proud of this recipe, because even though avocado mousse is no stranger to the vegan community, I have never seen a pistachio mousse before. I am sure that I am not the first person ever to create something like this, but I feel like this is a new creation! I loved how it turned out, I mean it's 2021 I think we accept avocado and all it's green glory lol!




Now, obviously the main flavor of this is pistachio, because I think most of us prefer the deliciousness of pistachios to avocado (plain avocado that is). Recently I discovered the brand Wilderness Poets, and guys... GAME CHANGER. This brand has an insane amount of variety on all things superfoods, nut butters, and more! If you know me, then you know that I am an absolute sucker for nut butter, so when I saw the selection that Wilderness Poets offers, my mind was blown! I still love my date syrup, but I also love maple crystals for so many reasons, honestly. First things first maple crystals contain high amounts of fiber. This is key when choosing any sweetener, my rule of thumb when deciding what sweetener to use is always opt for the option that provides the highest amount of fiber! The next reason I love maple crystals is because they work just like sugar! You can even melt them like you would a creme brûlée! They are very sweet, so you don't need as much as you would sugar, so a little goes a long way, which is always nice because you don't have to spend as much money! The list goes on, but I'll save that for another post, because I can guarantee that more recipes will be coming using maple crystals!   1. Simply add all ingredients to a blender and blend until smooth!

  2. (It sets nicely in the fridge, and the lime helps retain the color, but it still may brown) Top with raspberries and coconut and enjoy!
