Lemon Cheesecake Smoothie Bowl

Yep, you heard that right. This smoothie bowl tastes just like your favorite dessert, all while being vegan, refined sugar-free, dairy-free, and high protein! It can also be made banana-free!


Happy Monday! I got the perfect recipe for you to try out this week. It's a smoothie bowl, so naturally it is super easy to make, and is high protein, so it won't leave you hungry and unsatisfied after eating. I mentioned above that this recipe can be made banana free with just one simple swap, jackfruit! I made this recipe twice, once using jackfruit, and once using jackfruit, and they both turned out great! You can also try using half of each and mixing the two (my personal favorite way) .


I have been a smoothie lover for as long as I can remember. I remember making them all the time growing up, and then once I got to college I began making them daily in my dorm. I really can never get sick of them. They also are totally affordable. I feel like smoothies get a bad rep because when you order one at a restaurant or cafe they charge 6+ dollars for a small/medium sized smoothie that doesn't even contain all that great of ingredients. When I was in my dorm making them I would buy bananas, almond milk, and a bag of frozen mixed berries (shoutout cherry berry blend, if you know, you know), those three items would last a week of smoothie meals for about $10. Now I definitely could have spiced these up a bit, I usually added peanut butter and coconut as toppings, but I could have added some vegan protein powder, chia seeds, frozen spinach etc. to make the meal a little more complete, but those were my early vegan days, and I didn't know any better. Now I have a way better understanding of what my body needs, and what works best for me personally.

When I create these smoothie bowls now I usually have one of two goals when creating them; nutrient dense, or unhealthy dessert replacement. I am assuming you can guess which of the two this recipe was focused on. I love, love, love lemon flavored desserts, so when this idea popped into my head I was ecstatic. A smoothie bowl that can either be a complete meal, or a dessert, count me in. The recipe for this smoothie is extremely easy, and can be done in a single step!

Recipe

1 Large serving or 2 Dessert servings

Ingredients:


- 3 Frozen bananas or 1 1/2 cup frozen jackfruit

- 1/4 Cup coconut cream

- 1 Scoop Plantfusion Complete meal protein powder

- 3 Medjool Dates

- 1 Teaspoon vanilla

-Juice and zest from 2 lemons (do not skip the zest, it is crucial for the flavor!)


Directions:

  1. Combine all ingredients together in blender and blend until smooth ice cream texture is obtained. Enjoy!
