Kale Caesar Salad

Upgrade your side salad game with this super healthy whole foods plant based caesar salad! This salad can be enjoyed as a side, or even a healthy low calorie lunch option! This vegan salad recipe is oil-free, dairy-free, gluten-free, refined sugar-free, and free of any processed ingredients!

Happy Hump day friends! I got a recipe you guys are going to love today! I know there are hundreds, if not thousands of vegan caesar salad recipes out there, but when I got the idea for this recipe I knew it would set itself apart from the others. This salad recipe is the ultimate healthy vegan salad recipe. I used the "cleanest" ingredients to make this recipe.


What do I mean by the "cleanest" ingredients? I see that people hate on the world clean a lot when referring to food, and honestly this pisses me off. They do this because they say "well what is defined as clean?", or "stop putting labels on food". I think we should put labels on food. We all know that Oreos are unhealthy, we know that apples are healthy. We know that something that has artificially flavors probably isn't clean, and we know that something that has one plant based ingredient is clean.


I am not saying that you should never eat a slice of cake, or to stop enjoying the Oreos. I just think that collectively we need to move towards eating more "clean" diets. It is actually so simple to eat a clean and healthy diet when you think about it, you just have to stop looking for shortcuts. More often than not, foods become contaminated with these harmful ingredients when the manufacturers are searching for ways to lower the calories, or fat, or whatever artificially. If we just instead focus on consuming plant based ingredients that come from the ground, or only contain ingredients that we can immediately identify, we will achieve a much healthier diet.

Recipe

Serves: 4-6 Side salads

Total time: 15 Minutes

Ingredients:

  • 1 Bunch kale

  • 1 15oz Can chickpeas

  • 1 Teaspoon onion powder

  • 2 Tablespoons Wilderness Poets pine nut butter - "VEGAN10"

  • 1 Teaspoon stone ground mustard

  • 1 Teaspoon coconut aminos

  • 1/2 Teaspoon garlic powder

  • 1-2 Tablespoons water to desire consistency

Directions:

  1. Begin by washing your kale (PLEASE). Strain and rinse the chickpeas and coat with onion powder. Place in the air fryer (or oven) for 10-15 minutes.

  2. Make the dressing by simply combining all ingredients together.

  3. Massage the kale with the dressing. Once the chickpeas are done, add to the salad. Top with black pepper and enjoy!
