Healthy Vegan Strawberry Ice Cream

This healthy summer ice cream flavor combines my healthy vegan ice cream base with ripe seasonal flavors to create the perfect plant based ice cream recipe! This vegan ice cream recipe is plant based, dairy free, oil-free, gluten-free, paleo, refined sugar-free, and high fiber!

Happy Monday friends! Bringing all the dessert vibes today. This past weekend was my Dad's birthday, so I made him my vegan ice cream, and I made it strawberry. Strawberries are in season right now, and I am totally here for it. There's just something about ripe strawberries that not much else can compete with.


I love making desserts that are fruit flavored, because it's a great way to add extra nutrients to your dish! Strawberry is one of my go to flavors. I made a strawberry poptart recipe, if you are looking for more fun seasonal dessert recipe. In the future I want to chop up the poptarts and add them into this ice cream recipe for a fun flavor. I want to keep sharing more plant based ice cream flavors with you guys so please let me know what your favorites are!


Do you get super annoyed when you go to the grocery store, and search the freezer section for a healthy ice cream, and continually get annoyed by the fact that there's never a fully plant based option? I know I do. Growing up my family ate a lot of standard American ice cream, like a lot. When my health journey began and I went vegan I ate the vegan Halo Top Ice cream a lot, because I thought that it was a healthy option. While I still think vegan halo top is a great low calorie ice cream with great flavors, it's not truly plant based. For me I believe that plant based should include only unprocessed plants. Things such as cane sugar, and coconut sugar aren't plant based in my opinion. When I first developed my healthy vegan ice cream, I wanted to be sure that it was created with minimal ingredients and was truly plant based.


Let's get to that recipe!

Recipe:

Serves: 6

Total time: 45 Minute churn


Ingredients:

  • 1 Can full fat coconut milk

  • 1 Cup cashews

  • 4-6 Medjool dates

  • 2 Teaspoons vanilla extract

  • 1 1/2 Cup water

  • 2 Cups Dehydrated Strawberries

Directions:

  1. In a high speed blender blend the dehydrated strawberries until they become a powder.

  2. Make the Ice cream by following my ice cream base recipe

  3. Serve and enjoy!
