Healthiest Vegan Ice Cream Ever

This 4 ingredient vanilla Ice Cream recipes is the healthiest ice cream you will ever make. This recipe is rich and creamy without all the sugars and oils most vegan ice cream recipes call for. This recipe is vegan, paleo, oil-free, gluten-free, dairy-free, refined sugar-free, and high fiber!

Happy Monday Friends! I hope everyone enjoyed the holiday weekend! I definitely, I was planning on having this recipe up yesterday, but I was enjoying time with family, and did not want to have to seperate myself from the fun just to get this post out, plus it's only one day late, and I don't think anyone was really checking for healthy recipes yesterday lol. Anyways, I am so, so, SO excited to share this recipe with you all.


This was my second attempt to making this recipe, so initially I was not very optimistic. However, I was simply amazed when this recipe came out the way it did. I would honestly argue that the taste and texture of this ice cream recipe is even better than store bought ice creams that are loaded with refined sugars and excess oils. I was so happy because healthy vegan ice cream has been my biggest struggle to make, besides oat milk, but that's a whole other conversation lol. Sometimes you just have to make it as simple as it can be, and that's how you make it a success, simple recipes for the win!


This recipe is made sweet using my all time favorite natural sweetener: dates! I love dates because they don't spike the blood sugar too much, and they have fiber and lots of vitamins and minerals. Therefore, dates are not only helping you stay away from unhealthy sweeteners, but they are health promoting, and that is what I am all about here. I always thought dates were way too expensive, but recently I found the best way to get bulk dates, I am talking 4.4 pounds of premium quality medjool dates for $24!! I added them to my Amazon storefront , and I can promise they are worth it, they are from the joolies brand and they are called ugglies. They are all excess dates that don't meet their quality standard, but like they are honestly the best dates I have ever had, they are beautiful. Now that I feel like I have mastered the base for this recipe, the options are endless. I think the next time I make it I am going to make it I will make a strawberry flavored ice cream. The one thing about this recipe that I really want to continue to work through is finding a way to make it low-fat. Though this recipe is made using clean ingredients that are whole foods plant based, it is still a high fat food, so if you are keto, or on a vegan keto diet, this may be for you. I personally do not think a keto diet is in any way a healthy diet, but that is for you and your health professional to figure out. I personally eat a low fat vegan diet and find that that, works best for me. I do not exclude high fat foods such as nuts, avocados, or coconuts from my diet at all, but when there is a lower fat option available I take it; fats are healthy for you, but just make sure (as you should any food group), that it does not get out of hand. In conclusion, this ice cream is a great healthy treat to make and indulge in without overindulging in the harmful sugars, oil, and other chemicals used in processed ice creams. I wouldn't recommend making this recipe every night, but it's a great option for a healthy ice cream and netflix date, or celebrating a birthday! I honestly can't wait to share this recipe any longer, so let's get to it!

Recipe

Serves: 4-6

Total Time: (Soaking time 8 hrs), Churning time: 45 minutes

Ingredients:

  • 1 Can full fat coconut milk

  • 1 Cup cashews

  • 4-6 Medjool dates

  • 2 Teaspoons vanilla extract

  • 1 1/2 Cup water

Directions:

  1. Begin by soaking the cashews and the dates in the 1 1/2 cup water for at least 8 hours, or overnight, honestly the longer the better. Place the coconut milk can in the fridge overnight as well. Insure the your ice cream maker is ready for use as well.

  2. Once the cashews and dates have soak, make sure the you save 1/2 cup of the water(I personally save it all, and use the extra in smoothies for a little sweetness, but make sure you save 1/2 cup for this recipe).

  3. In a high speed blender, add the cashews, dates, vanilla extract, the 1/2 cup of soaking water, and the white coconut cream scooped off the top of the can. Blend the mixture for 2 minutes until everything is blended up and you get a super smooth cream mixture.

  4. Pour the mixture into your ice cream maker a churn for 45 minutes. It should be soft serve ready! If you want it to harden up more you can place it in a plastic or glass container for about 2 hours, and you will be able to scoop it (as seen in the picture). Either way I hope you enjoy!
