Healthiest Banana Bread EVER
This delicious Vegan Banana bread recipe is the healthiest you'll ever make. It is Gluten-free, Oil-free, Dairy-free, Egg-free, Refined sugar-free, High fiber and loaded with whole foods!
There are so recipes out there for banana bread claiming to be healthy, but as you scroll through the ingredient list the red flags pop up one by one; coconut oil, brown sugar, white flour, etc. I always try to avoid these ingredients when cooking, or baking at home. I usually use a lot of dates when baking at home, but I thought with bananas being so naturally sweet, dates could take a back seat for this recipe. I also wanted to make this recipe date-free, because I wanted my blog to offer a recipe that is free of dates, so if someone has an allergy, dislike, etc. they could find the perfect baking recipe for them! Also dates/date products can be a little pricey, so if you're on a budget this is a super affordable recipe.
This recipe is super easy to make, and stores super well in the fridge, because the bread is so moist. You can also freeze it as well, and not have to worry about it drying out. I loved eating the leftovers the next couple days for breakfast. This bread is a great option for a breakfast meal if you prefer to have something sweeter and not super heavy, yet filling.
With Christmas right around the corner this is a great Holiday bread to enjoy with family and friends if you're sick of Christmas cookies, and wanna switch it up with a dessert that is totally "guilt-free"! Banana bread is also great for preventing food waste, because it uses those bananas that are past their prime.
Alright let's get to this super easy and delicious recipe!
Total time: 1 Hour 20 Minutes
- 2 1/2 Cups oats ground into flour
- 3/4 Cup coconut flour
- 3/4 Cup applesauce
- 1/4 Cup flaxseed mixed with 1/2 cup water
- 1/2 Cup walnuts
- 2 Very ripe bananas
- 1/2 Cup oat milk (can sub almond, soy, coconut, etc.)
- 1 Teaspoon baking soda
- 1 Teaspoon baking powder
- 1 Teaspoon Vanilla
- 1/2 Teaspoon Cinnamon
Start by preheating your oven to 350. While your oven is preheating add your flaxseed and water together in a small bowl to make the flax "egg". Next take your ripe bananas and peel them and place them in a large bowl. Mash the bananas with a fork until you reach puree type texture.
Next add the applesauce to the banana mixture and mix. To make your oat flour simply add it to a high speed blender until it is a flour texture. Add the oat flour, coconut flour, cinnamon baking powder, and baking soda to a separate bowl and mix.
Add the dry ingredients to the apple and banana mixture. Mix around (it will seem very dry at this point do not worry). Add the Flax egg and oat milk to the mixture and mix around with a spoon.
Lastly add the walnuts to the mix. Spray a bread pan and add the mix to it. Place it in the oven and bake for 1 hour, or until you can poke it with a knife or toothpick and it comes out clean.
Once done allow to cool for 10 minutes and serve!
