Gluten Free Vegan Cranberry Orange Bread

This delicious whole foods plant based vegan dessert recipe is sure to be a crowd pleaser. This dessert recipe is the perfect way to enjoy all those delicious fall flavors. This recipe is gluten-free, oil-free, refined sugar-free, vegan, dairy-free, and high fiber!

Tis' the season! I have always loved dessert breads, and cranberry orange is no exception. I wish stores carried cranberries all year around, because I'd be making this bad boy weekly. I was super excited to make this when I saw cranberries at the store, so after I picked those up, and a few other ingredients, I decided well I need flour so why don't I just go ahead and make this gluten free. I personally do not have a gluten allergy, but I do enjoy making things gluten free, because it pushes me to think outside the box, and it also comes with using a wider variety of ingredients, and boosts the fiber content of a meal!


I mean just look at that crispy, yet moist loaf right there, made with all natural and health promoting ingredients. I do have a quick disclaimer although this recipe is oil free, I did spray the bread pan so that it wouldn't stick, although if you have a nonstick bread pan you might be able to just cook it in that and achieve the same results.


I do not cook with oil, however I do occasionally use the oil spray to ensure that it doesn't stick to the pan. I do always use the Chosen foods avocado oil, because it is made from just avocado oil, and doesn't contain any gross ingredients that you can't figure out how to pronounce. alrighty, time to cut some slices of this loaf and dig in










I also need to mention that you should let this loaf cool for 10-15 minutes before serving. I find when baking gluten free it is SUPER important to let your dish cool for a minute before serving, because it will hold its form better, and the texture will perfectly moist, and not fall apart. When I get impatient and attempt to remove it from the pan before letting it cool it seems a little mushy, but I assure you if you wait a little it will come out perfectly moist!


Okay, so my bread cutting skills need a little work...(don't mind where I totally squished the bread, whoopsies). Besides that look at those cranberries! The perfect balance of sweet orange and sour cranberries make this an absolute must to add to your holiday baking list! I think it's time to see the recipe don't you?

Recipe

Total time: 1:15 hr

Serves: 6

Ingredients:

  • 2 1/2 Cup Oats (ground into oat flour)

  • 3/4 Cup Coconut Flour

  • 1/4 Cup Ground Flaxseed (+ water to make into egg)

  • 1 Cup Unsweetened Apple Sauce

  • 16oz Bag Cranberries

  • 2 Oranges; Juiced and zested

  • 1 Teaspoon Vanilla

  • 1 Teaspoon baking Powder

  • 1 Teaspoon Baking Soda

  • 3 Tablespoons Date Syrup/Paste(homemade or store bought)

Directions:

  1. Start by preheating your oven to 375.

  2. Now blend your oats in a high speed blender until they become a flour texture. While that is blending you can make your flax egg by combining you 1/4 cup ground flaxseed with 1/3 cup water, mix and set aside until it becomes like an egg in texture.

  3. Combine your oats with remaining dry ingredients (don't add flax egg in this mix)

  4. Time to juice and zest your oranges! I always zest first, I just find it easier that way (don't forget to wash them!!!)

  5. Now that you got your orange juice you can combine all your wet ingredients together (add zest as well) and mix until it's combined all the way through.

  6. Finally combine all ingredients together in a large mixing bowl and stir until combined, and you get a nice spreadable bread mix. Pour into a sprayed pan and bake for 50 Minutes (it'll be worth the wait). After 50 minutes poke with a toothpick to ensure it is done all the way through, then remove from oven and let cool 10-15 minutes, and enjoy!
