Gluten-Free Triple Berry Protein Waffles

These Gluten-free waffles are the perfect simple breakfast recipe that will keep you full for hours. This simple 5 minute recipe is so easy you'll never buy pre made waffles again! This recipe is vegan, gluten-free, oil-free, refined sugar-free, high protein, high fiber, and loaded with antioxidants!

Happy Hump day friends! I have one of my favorite, and most frequently made recipes for you all today! If you follow me on Instagram, you see these protein waffles very frequently. I could seriously eat these everyday and never get sick of them. I think one of the reasons I love this recipe so much is because how simple it is. I have, and will never be someone who wakes up on the right side of the bed lol. If you know me, this may seem weird because I am totally an early bird, yes I know this makes no sense. I wake up super early, but I am in the worst mood for that first hour of waking up. In this first hour of waking up I don't want to talk to anyone, and I need quick breakfast, because the mornings are when I am the hungriest. Most days I make protein Oatmeal, simply because I can load it up with "superfoods" and ingredients such as Kelp to boost my daily iodine intake(PSA kelp has an extremely high iodine content, so less is definitely more!). However I would much rather eat these waffles everyday, because they are simply delicious.

The key ingredient in these waffles is the PlantFusion Complete Protein. If you know you know, I am absolutely obsessed with anything and everything PlantFusion. PlantFusion has a wide range of products including, many different types of plant based protein, collagen beauty products, supplements and vitamins, and they are all CERTIFIED VEGAN. I will never stop spreading the word about PlantFusion, because this company is amazing from the inside out, and I really believe that they do not get the recognition they deserve. They are hands down the best protein powder I have ever tried, period. They use clean and natural ingredients so you don't have to worry about all the icky ingredients that so many other protein powders contain, and they taste incredible. I honestly was not a protein powder fan before I found them, but I simply can not go a day without PlantFusion.



I love using different PlantFusion products for different creations. For my protein waffles I love using the COMPLETE LEAN, or the COMPLETE PROTEIN. I find that these products create the best fluffy, yet crisp texture for the waffles. I love using the chocolate brownie Complete Lean flavor for chocolate waffles. I think these products have the absolute least "protein powder taste", so when you use them in the waffles they add delicious flavor and nutrients instead of nutrients and unpleasant flavor! I love creating different flavored waffles (and baked oats as well) with PlantFusion, because the based recipe works so well.

I originally created this recipe with regular whole wheat flour, but recently I have been even more into gluten-free recipes than before, so I wanted to create an updated recipe for my waffles that was gluten-free. I wanted this recipe to be a little different than the OG recipe (Posted on my Instagram), because I didn't want the photos to turn out the same. The easiest way to switch up the recipe is to add fruit. I love, love, love blueberry waffles. I used to eat the blueberry Eggo waffles all the time when I was younger. Thankfully this waffle is way healthier than those waffles. I added extra fruit on top for the ultimate antioxidant boost! I am so excited to finally bring a gluten-free waffle recipe to the all natural vegan! Let's get to the recipe then!

Ingredients:

  • 1 Scoop PlantFusion Complete Protein

  • 1/3 Cup Oat Flour

  • 1/4 Cup Blueberries

  • About 3/4 cup water or plant based milk. Add slowly and mix gradually adding more.

  • Optional: 1 tsp vanilla extract

  • Top with vegan yogurt and date syrup

Here are some of the other products I used to create these waffles!

Directions:

  1. Begin by making your oat flour if it is not already pre made. I like to pre make a lot at one time. It is super simple to create oat flour, all you have to do is blend it in a blender on high for about 30 seconds.

  2. In a bowl combine the 1/3 cup of oat flour and 1 Scoop PlantFusion Vanilla Complete Protein , and the liquid and mix. You may need to add less, or more water. I usually eyeball it.

  3. Spray the waffle maker, and pour out the mix. You want it to be thicker consistency, so you will need to scoop it out some.

  4. Close the waffle machine and cook until light turns green! Make sure not to sneak a peak, that will break the waffle!

  5. Top with vegan yogurt, date syrup, and fresh berries, enjoy!
