GF Vegan Chocolate Chip Cookies

These delicious cookies are gluten-free, oil-free, refined sugar-free, and vegan of course! They are the perfect healthy cookie to make during this Christmas baking season that will leave you satisfied and free of guilt!


Ah, the best time of the year has FINALLY arrived! Baking has always been one of my passions so when the Holiday season comes around I seize every chance I can to get in the kitchen and bake. Traditionally there were some side effects that came with the Holiday season...10lbs later, yikes! However since going vegan I have definitely avoided that, for the most part. This year I set the goal for myself to create all super healthy baked goods this Christmas, so that I would not only avoid the Holiday weight gain, but also create recipes that were health promoting!

This specific recipe is loaded with fiber, healthy fats, and hidden fruits! If you've been following me for awhile you have probably noticed a major increase in gluten free recipes. I have been getting into learning how the different flours work, and the textures they can create. For example these cookies were more "fluffy" than a typical chocolate chip cookie, which I actually really liked. I especially liked these cookies after sitting in the fridge overnight, they were chewy and the chocolate added a perfect crunch.


I also need to include a product shoutout that allowed me to create this recipe without refined sugars. I used the Lily's Sweets dark chocolate (double check the one you purchase is vegan,because not all their products are vegan, but a lot of them are). This bar has a nice sweet taste, and doesn't taste bitter like a lot of the other vegan chocolate bars on the market. I always reach for their baking chocolates, because they are sweetened with stevia rather than cane sugar like so many other baking chocolates are. Alright you ready for the recipe?


Recipe

Serves: 12 Cookies

Total Time: 30 Minutes

Ingredients

- 1 Cup Almond Flour

- 1/2 Cup Oat Flour

- 1/3 Cup Coconut Flour

- 1/2 Cup Date Sugar

- 1/4 Cup Tahini

- 1/4 Cup Applesauce

- 1 Cup Plant Milk

- 1/2 Teaspoon Baking Soda

- 2 Teaspoons Vanilla

- 1/3 Cup Ground Flaxseed Mixed With 2/3 Cup Water

- 1 Dark Chocolate Bar

Directions:

  1. Begin with preheating your oven to 350. Next combine the ground flaxseed and water together to make your flax egg, set aside.

  2. Next combine all your dry ingredients together in a bowl. Combine the remaining wet ingredients together in another bowl, once your flax egg is ready combine it to your wet bowl.

  3. Combine both of your bowls together and mix until you get a cookie dough texture. Now break up your chocolate bar and add it into the mixture.

  4. Scoop out the cookie dough into balls and place on baking sheet or mat. Press the cookies down slightly and bake for 20 minutes or until done. Once done allow to cool for 10 minutes and enjoy!
