Happy Tuesday friends! I'm not going to waste any time today, because I mean LOOK AT THESE! These fudgy brownies are just simply glorious. I always find (especially with healthy vegan brownie recipes) that the brownies always come out to fluffy and cake like. I am a strong believer that brownies should be thick and dense. I have honestly never really been able to achieve this perfect texture for a traditional brownie recipe until now. I have a Sweet Potato Brownie recipe and a Mesquite Eggplant Brownie recipe that both have nice fudgy textures. However these are a little more "unusual" brownie recipes that may scare some people off, even though they are so delicious!


I am so excited to bring you all today's brownie recipe, not only because it is the perfect texture and delicious, but also because they are super healthy. Since I used medjool dates to sweeten this recipe, it is free of any refined, or processed sugar, yay for whole foods plant based ingredients! Because I used dates as my plant based sweetener, this recipe is high fiber, and low in sugar!



These brownies are also extremely easy to make; you just need a food processor, or blender and one bowl! If you don't have a blender, or food processor, you can use date syrup for an easier option. I always go for DVASH Date syrup , I am seriously obsessed with this stuff.


If the price of dates are turning you away from this recipe, I have to let you in on an incredible Amazon find. You can purchase 4.4lbs of dates for $25. Yes, you read that right! I always buy my dates from Joolies Ugglies on Amazon. These dates are QUALITY people. I was a little hesitant at first to purchase these dates, but I can assure you that there is nothing to worry about, this is one of the best deals I have ever found.

This plant based brownie recipe is super dietary friendly, because it is:

  • VEGAN

  • OIL-FREE

  • GLUTEN-FREE

  • DAIRY-FREE

  • REFINED SUGAR-FREE

  • HIGH FIBER

  • WFPB

With that said, I think it's time for the recipe!



Ingredients:

  • 1 Cup Packed Medjool Dates

  • 1 Cup Cacao powder

  • 3/4 Cup oat flour

  • 3 Tablespoons flaxseed

  • 1 Cup raw almonds

  • 2 Cups of plant based milk (I used almond)

  • 1 Teaspoon baking soda

  • 1 Teaspoon vanilla extract

  • 1 Teaspoon apple cider vinegar

  • Pinch of salt


Directions:

  1. Preheat your oven to 350. Blend your oats into a flour if you have not already.

  2. Combine almonds, dates, plant milk, and vanilla to a blender and blend until smooth.

  3. Add to a bowl with remaining ingredients. Pour into a nonstick brownie pan and bake in the oven for 40 minutes. Remove and allow to cool for 10 minutes, top with flaky salt, and enjoy!
