Chocolate Banana Nut Muffins
This recipe is a delicious vegan breakfast option that is Gluten-free, Oil-free, Refined sugar-free, vegan/dairy-free, and filled with fruits and vegetables. This recipe is perfect to meal prep for a healthy on the go breakfast.
Happy Friday! This week as dragged on for so long. I have also been feeling under the weather, so I have not been in too much of a mood to create recipes and geet in the kitchen. Luckily though, I meal prepped this recipe, and it was great to have on hand. I am such a huge fan of the chocolate and banana combo(usually with a spoonful of PB on top, because you just can't go wrong with extra PB). I have also been loving on the go breakfasts, because when I am not stuck at home with covid, I have to run to work early in the mornings, so having my breakfast ready to go allowing me to get those extra couple minutes of sleep is key.
I also love having meals prepped, because I am such a snacker when I am cooking/baking, so when they're already ready to go I can just grab what I am hungry for, and not snack on all the batter lol. These muffins are not only delicious and healthy, but they are super filling. The walnuts are perfect for keeping you full, and giving you energy to take on the day.
Another key ingredient in this recipe is Full Green's Best Morning Ever Cocoa and Banana. I absolutely love these packets, because they are shelf stable, so they are perfect to travel with, or keep in your pantry for whenever you don't feel like cooking, or to bake into muffins of course! Not only are they great for this, but they also have hidden vegetables, which nobody can complain about. They are also free of refined sugar, oils, or preservatives, so they are such a clean option. Alright let's get to that recipe!
Total time: 50 minutes
Serves: 6 Muffins
- 2 Ripe bananas
- 2 Cups GF oat flour
- 1 Teaspoon vanilla
- 1 Teaspoon baking powder
- 1 Teaspoon baking soda
- 1/4 Cup ground flaxseed mixed with 1/4 cup of water
- 1/4 Cup cacao powder
- 2 Packages Full Green banana cacao
- 2/3 Cup plant milk
- 1/2 Cup chopped walnuts
Preheat the oven to 350.
Mash banana in a large bowl. Add Full green packages and mix thoroughly.
Combine remaining ingredients and mix until batter is smooth, it will be thicker because this recipe is gluten free.
Pour into sprayed muffin tin and bake for 30-45 minutes, so that you can poke it with a toothpick and it comes out clean.
