Chipotle Lime Fiesta Bowl

This plant based vegan Mexican recipe is loaded with flavor and vegetables to satisfy every craving and keep you full for hours! This is a simple vegan recipe is quick, easy, and perfect for healthy meal prepping. This recipe is vegan, oil-free, gluten-free, diary-free, plant based, high protein, and high fiber!

Happy Hump Day friends! Who is ready for a healthy vegan Mexican recipe? I think almost everyone can agree that Mexican food is some of the best food. Before going vegan/plant based I always looked at Mexican food like it was one of the most healthy cuisines on the planet. Back then a typically Mexican dinner/lunch for me consisted of cheese, meat, processed chips, and maybe a little salsa for some color LOL. Needless to say I was right for thinking of it as an unhealthy meal.


Nowadays, when I have a plant based Mexican meal I know I am eating healthy food. When you focus on creating your meals with plants you never have to worry about them, because you can be 100% certain that they are healthy! There are so many healthy vegetables, beans and whole grains to incorporate into Mexican meals. Instead of focusing on the bad foods like I used to, I now focus on how many good foods I can incorporate into the dish! It has helped me create such a healthy relationship with food (something I used to struggle with big time).


By now I am sure you have heard all about plant based diversity, and the benefits it has for your gut health. I won't bore you with the science (I do not have a science degree, so I would not necessarily be a credible source, however I read a lot so think of me as a Spark Notes for health facts!), but the higher variety of plants you can incorporate into your diet the happier your gut is, and the happier the gut is the happier you are (there's serious proof to this). I know that gut health is very trendy right now, but for good reason, it keeps your whole body functioning properly! Gut health is not only about eating plants, but also about removing harmful foods from your diet. Luckily for you you don't have to worry about any of these ingredients at The All Natural Vegan, because all of my recipes are made worry free! This recipe specifically is:

Serves: 4

Total Time: 30 Minutes

Ingredients:

For the Cilantro Lime Rice:

  • 1 Cup dry brown rice

  • Juice of 1 Lime

  • 1/2 Cup chopped cilantro

For the Chipotle Vegetables:

  • 2 Bell peppers

  • 1 Onion

  • 1 Zucchini

  • 2 Cloves garlic

  • 3 Chipotle Peppers in Adobo sauce

  • 2 Tablespoons Adobo Sauce (from the same container as the peppers)

  • 1/2 Cup water or vegetable broth

For the Black Bean Pico

  • 1 Cup Black Beans

  • 1 Large Tomato

  • 1 Cob of corn

  • 1/2 Cup chopped cilantro

  • 3 Cloves garlic

  • Juice of 2 Limes


Additional ingredients:

  • Lettuce (romaine or iceberg)

  • Avocado

Directions:

  1. Begin by cooking your rice as you would normally. I cooked mine in the Ninja Foodi. Once done add the lime juice and cilantro and mix. You can cook the rest of the food while the rice is cooking.

  2. To make the black bean pico simply dice the tomato and chop the corn. Add all ingredients together in a bowl and mix. Set aside.

  3. To make the chipotle vegetables: Slice the onion and pepper into strips. Add to a saute pan with the water/vegetable broth. Next add the chipotle peppers and adobo sauce. Once peppers and onions are cooked add the zucchini and cook for 5 minutes.

  4. To serve chop the lettuce and place that as the base. Next add the rice, vegetables and black bean pico. Top with avocado and extra lime juice (if you like), and enjoy!
