Carrot Cake Overnight Oats

This simple healthy breakfast makes dreams of dessert for breakfast something of the past. This 5 minute recipe will satisfy all those sweet tooth cravings while giving you a protein fueled breakfast with a little extra daily vegetable boost! This recipe is vegan, oil-free, refined sugar-free, gluten-free, and dairy-free!

Happy Thursday friends! I don't know about y'all, but I have been craving sweets like nobody's business recently. I have always been a sweet breakfast over savory breakfast type of girl, but recently I feel as though that has been put into hyperdrive. This weeks sweet tooth craving: carrot cake. I feel like summer is such an odd season to crave this, but cake is cake. Now, in a perfect world we could all be eating cake for breakfast everyday, but instead we live in an imperfect world where if we were all eating cake for breakfast everyday we would probably end up on My 600lb life (600lb looks like boob, I said what I said lol). I think it's so bizarre when people think eating healthy is boring. I laugh because most unhealthy foods started out as healthy foods. For example (fun history lesson here) carrot cake was created because people could not afford sugars (back then they were expensive luxuries, how wild!!) so they added carrot for sweetness. You are probably laughing reading "carrot for sweetness", but it's true, and it makes sense carrots are quite sweet. Of course modern day our taste buds have adapted to refined sugars and we no longer taste the natural sweetness of many fruits and vegetables the same as our ancestors once did. This is one of the many, many reasons I would encourage you to cut out, or at least limit your intake of refined sugars. It is so easy to avoid these days with the endless options available to us. Calling all my easy breakfast people this one's for you! Personally I am never in the mood to cook breakfast, and just want to eat something right away, so overnight oats are my go to. I have overnight oats (mostly morning of oats because I am too lazy to do it the night before) almost everyday. I usually have the same chocolate overnight oats everyday, but I love switching it up. One of my favorites that I have previously done is my Key Lime Pie Overnight Oats , but this is definitely competing with that one with being my favorite. I love this one especially because it's such a great way to get in extra vegetables throughout the week. Also, disclaimer: these raisins were strictly used for photography purposes only, I absolutely despise raisins. When I was actually eating this I put dried mulberries on top, and it was delicious! Alright, let's get to the recipe!

Serves: 1

Total Time: 5 Minutes

Ingredients:

  • 1/2 Cup GF oats

  • 1.5 Scoops Vanilla Elite Activated Peptide Protein

  • 1 Small/medium carrot, grated

  • 1 Tablespoon chia seeds

  • 1 Teaspoon pumpkin pie spice

  • 1/2 Teaspoon cinnamon

  • Plant milk to desired consistency (3/4-1 cup) I used unsweetened soy

  • Optional: Walnuts, raisins, mulberries, coconut

Directions:

  1. Grate the carrot first, then add remaining ingredients together and stir. Once combined place in the fridge overnight, enjoy!
