Buffalo Cauliflower Salad

This delicious and nutritious plant based salad is loaded with healthy vegetables and flavor. This simple recipe can be made in 25 minutes, and is air fryer friendly! This recipe is: vegan, gluten-free, dairy-free, high protein, high fiber, and has oil-free salad dressing!

Happy Monday friends! I have to be honest with you guys, I have been struggling today! I have a long list of things to do, because I didn't work at all this weekend. It was nice to have a break and enjoy time with friends, but I love working so I do feel a little stressed because I didn't get to do all the things I needed to do. Thankfully I can finally share this delicious recipe with you all!


Last month I partnered up with Wholly Veggie to create some delicious plant based recipes for them. I made a bunch of delicious recipes, but this salad has to be my favorite. What can I say, I love a good salad! I loved using Wholly Veggie products because they were so simple to make. Typically if I were making this recipe I would make the cauliflower bites from scratch, but we are all human, and sometimes connivence is key! I loved these bites, because you could simply place them in the oven or air fryer, and then coat them in the sauce. I love cauliflower bites, but the mess can be too much sometimes.

I am a big fan of Wholly Veggie, because even though they use oil in their ingredients and it is technically a processed food, they focus on using quality ingredients. These bites are:

  • VEGAN

  • GLUTEN-FREE

  • SOY-FREE

  • NON GMO

  • PLANT BASED

My recommendation is to enjoy these as a healthy splurge, or if your a new vegan! If you are going vegan, or new to being a vegan, I totally understand how difficult it can be to navigate it, so products like these are great for you! I was living in a dorm my sophomore year of college when I was first vegan, and boy did I wish I knew about these then. I think I ate smoothies plain oatmeal, and chips and salsa for a whole year! Luckily I love all those foods, but still diversity is important!


When creating this salad I wanted to make sure that it contained lots of other nutrient dense ingredients and colors, so that it would be a complete nourishing meal. I knew that these bites were going to be the star of this salad, so I went with simple flavors to compliment the bites. I also wanted it to be a beautiful salad, so color was key. A good rule of thumb about plant based food is color = nutrients, so try to make as many dishes look like the rainbow as you can!

Recipe:

Serves: 4

Total Time: 25 Minutes

Ingredients:


  • For the Ranch Dressing:

  • ½ Cup cashews soaked in water

  • ¾ Cup almond milk

  • 1 Teaspoon miso paste

  • 1 Teaspoon garlic powder

  • 1 Teaspoon onion powder

  • ⅓ Cup chives

  • ¼ Cup dill

  • ¼ Cup parsley

  • 1 Teaspoon apple cider vinegar

  • 2 Teaspoons nutritional yeast

Directions:

  1. Place the cauliflower wings and the chickpeas on a baking sheet and bake according to package instructions.

  2. In a blender combine cashews, almond milk, apple cider vinegar, nutritional yeast, miso paste, garlic powder, onion powder, chives, dill, and parsley. blend on high for 30 seconds to a minute until it is evenly combined.

  3. Chop the cucumber, cherry tomatoes, romaine, avocado, and cabbage. Add to a bowl along with the sprouts.

  4. Once the wings and chickpeas are done remove from the oven and toss in the buffalo sauce. Top the bowl of veggies with the wings and chickpeas; pour the ranch dressing over the salad, serve and enjoy!
