Blueberry Protein Bake

This vegan breakfast dish is high in protein and gluten/refined sugar free. It will keep you super full for hours.

Is there anything better than dessert for breakfast? Matter of fact there is, high protein dessert! This delicious blueberry bake is super high in fiber as well, which is another important element when searching for foods that keep you full for longer periods of time.

I normally prefer a quick oatmeal breakfast in the mornings before work, however when I have time on the weekends I love experimenting and creating new indulgent recipes that are of course still healthy. I have been super into creating gluten free recipes lately, and this is not because I believe that wheat is the devil, but because I find that a lot of gluten free alternatives just have better nutrients, such as fiber or healthy fats. I also love creating new things, so for me it is super fun to try different combinations and see how they turn out.

Time to talk about the star of the show, and that is PlantFusion Protein powder. For this recipe I used the Complete Meal in the flavor vanilla. I honestly can say that this is the best vegan protein powder I have ever used. Not only does it taste so much better than any of the others I've tried, but it is loaded with nutrients. Total Time: 50 Minutes


- 3/4 Cup Oats (ground into flour)

- 1/4 Cup Almond Flour

- 1 Scoop Plant Fusion Vanilla Complete Meal

- 1/4 Cup Ground Flaxseed with 1/2 cup water

- 1/4 Cup Applesauce

- 1/2 Cup Frozen Blueberries

- 1 Cup Plant Milk

- 1 Teaspoon Baking Powder


  1. Start by preheating your oven to 350. Next make sure you have a bowl or mug that is oven safe to bake this in.

  2. Next make your flax egg by combining flaxseed with water and setting aside until egg texture is achieved, about 5 minutes.

  3. Combining the remaining dry ingredients together in your mug or bowl. Add the applesauce and flax egg and mix. It will be very thick and dry, now add the plant milk and mix very well. Lastly once the batter is mixed completely add your blueberries.

  4. Place your bowl or mug into the oven and bake for 45 Minutes or until you can poke a knife into it and it comes out clean, let cool before eating. Enjoy!
