Apple Pecan Stuffed Sweet Potatoes

Ah! Finally launching my blog! This blog has been something that I have considered doing for a long time, and now that @theallnaturalvegan Instagram is almost at 2K I figure it is time to move my recipes over to a blog, where they can be organised, and I can add more details! I ran into to the issue of not having enough text left to post a recipe to the capacity I would have liked, so hopefully having this blog will put an end to that! From time to time I still plan on sharing recipes on my Instagram, and will definitely still be sharing most of my pictures there, but this will be the main showcase for my recipes!
That brings me to today's post, a new recipe I thought of over the weekend and developed, and it is absolutely delicious. If you know me, you know that I absolutely love sweet potatoes, and stuffing them is my favorite way to enjoy them. This variation of stuffed sweet potatoes features sweet fall flavors, perfect for a dinner side dish, or enjoyed alone.
- 4 Large sweet potatoes
- 2 Sweet apples
- 1 Cup Pecans
-2 Tsp. Cinnamon
- 1 Tbsp. Date Syrup
- Granola of choice to top
Fist you'll need to start by preheating the oven to 350. Once the oven is preheated, poke holes into your sweet potatoes with a fork, and bake until soft(about 45 minutes). Once sweet potatoes are almost ready, dice up your apples. Saute apples with cinnamon and date syrup. I like to add a little water to the pan here, to give it a nice caramelised texture. Continue stirring on medium heat for about 5 minutes. Add the pecans, and cook for another 5 minutes. By this time the sweet potatoes should be finished. Take them out of the oven, and slice down the middle. Take a fork and mash the sides in to give and nice soft texture. Pour your apple pecan mixture into potatoes, and top with your favorite granola, and serve! Hope you enjoy as much as I did!
